It’s all in one.  Perfection:  Tasty.  Nutritious. Filling.   And, above all healthy, healthy, HEALTHY (oh, and low in fat and sugar, high in all the good stuff, including everything fibrous)!  I’ve included a handful of millet ‘cuz I love the gentle pop they give… something like the roe on a sushi roll.  Pop.  Pop.  Pop… a little something in your teeth for later.  Mmmph!

I love it!

Fantastic with my all-important morning coffee… terrific with a little afternoon tea.

These are crunchy, crumbly, chewy blobs of yummy goodness with a little blast of tangy and a tiny nip of sweetness…. and, did I mention easy?

Scrumptious Breakfast Cookie~

1/2 cup butter

1 egg

1/2 cup banana- mashed

1 tsp vanilla

1/2 cup brown sugar

1 cup whole wheat flour

dash salt

1 tsp baking powder

11/2 cups 4-grain cereal

1/2 cup rolled oats

1/4 cup unsweetended shredded coconut

handful millet

handful flax seeds

handful chocolate chips

handful raisins/craisins/desired dried fruit, chopped

Preheat oven to 350 degrees.  Cream butter and egg together until smooth.  Add banana.  Mix.  Add vanilla and brown sugar.  Mix until everything is good and thoroughly blended.

In a medium sized bowl, combine flour, salt, baking powder and remaining ingredients.  Everything.

Using your favourite wooden spoon or spatula, mix dry ingredients with the wet until they are well-blended, all dry ingredients, of course, no longer dry.

Drop tablespoonful piles onto a greased cookie sheet.

Bake for about 20 minutes or until showing signs of golden brown.  Cool on rack.
